Try these delicious high protein, low carb, gluten free pumpkin chocolate chip protein muffins! They are less than 120 calories and perfect to satisfy your sweet tooth this Fall!
Makes: 12 muffins
1 cup old fashioned rolled oats
1 cup pumpkin puree
1 cup Greek yogurt
2 large eggs
2 scoops Ryno Power Vanilla Protein
1 ½ teaspoon pumpkin pie spice
1 teaspoon baking powder
½ teaspoon baking soda
½ cup dark chocolate chips (optional)
- Preheat oven to 350 F.
- Add the oats to a blender of food processor and process until a flour forms (10 seconds).
- Add the pumpkin, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda and blend until well combined.
- Stir in chocolate chips.
- Separate into 12 muffin cups or a greased muffin pan.
- Bake for 20 minutes or until a toothpick comes out clean.
